I never had the privilege of tasting huevos rancheros until I lived in El Paso.  While mine don't come anywhere close to the ones I ate at places like Ciro's and Los Jarrones, I still enjoyed them.  I just cooked a corn tortilla in a frying pan for a minute, and made some fried eggs.  Add some veggies and beans of your choice, spice it up with some salsa, and esta muy delicioso!
